If you want a romantic dinner that's un poco fuera de lo común, why not add a Tex-Mex twist to your Valentine's Day feast? Revel in the passion and flavor of dishes that are as rich in history as they are in taste.

We''ll start with a fiery shrimp cocktail, ''Amor en Fuego'', followed by a dish inspired by the traditional ''Carne Asada Tampiqueña'' - but with a heartfelt twist, we''ll call ''Corazón de Filete Tampiqueña''. And for dessert, let''s indulge in the chocolatey goodness of ''Besos de Chocolate y Coco'' - a chocolate coconut flan that''s perfect for ending the night on a sweet note.

Preparados? Let''s dive in with ''Amor en Fuego'', a Tex-Mex style shrimp cocktail that''s sure to get your hearts racing with its bold flavors.

Ingredients for ''Amor en Fuego'':
- 1 lb of large shrimp, peeled and deveined
- 1 cup of ketchup
- 1/4 cup of lime juice
- 2 tbsp of hot sauce
- 1 tbsp of Worcestershire sauce
- 2 jalapeños, finely chopped
- 1/2 cup of finely chopped cilantro
- 1 avocado, diced
- Salt and pepper to taste

Instructions:
1. Boil the shrimp in salted water until they are pink and cooked through, then let them cool.
2. Mix the ketchup, lime juice, hot sauce, Worcestershire sauce, and jalapeños for the spiced cocktail sauce.
3. Combine the shrimp and sauce, then fold in avocado and cilantro.
4. Let it chill in the refrigerator to allow the flavors to blend before serving.

Next up, the ''Corazón de Filete Tampiqueña'', a delectable marinated steak paired with enchiladas verdes and guacamole. This dish is my creative take on a Tex-Mex classic, and while it''s not a traditional dish, it embodies the spirit of the cuisine.

Ingredients for ''Corazón de Filete Tampiqueña'':
- 4 skirt steak cuts (approximately 1 lb)
- 4 cloves of garlic, minced
- 1 tsp of cumin
- 1 tsp of chili powder
- 1/4 cup of lime juice
- 2 tbsp of soy sauce
- 2 tbsp of olive oil
- Salt and pepper
- Prepared enchiladas verdes
- Homemade guacamole

Instructions:
1. Marinate the steak with garlic, cumin, chili powder, lime juice, soy sauce, and olive oil. Let it sit for at least 2 hours.
2. Cook the steaks on a heated grill or pan to the desired doneness.
3. Serve with enchiladas verdes and fresh guacamole.

For our grand finale, we have ''Besos de Chocolate y Coco'', a flan that blends traditional flavors with a touch of chocolate.

Ingredients for ''Besos de Chocolate y Coco'':
- 1 can of sweetened condensed milk
- 1 can of coconut milk
- 1/2 cup of cocoa powder
- 6 large eggs
- 1 tsp of vanilla extract
- A pinch of salt
- 1 cup of sugar for the caramel

Instructions:
1. Preheat the oven to 350°F.
2. Melt sugar over medium heat to make the caramel, then pour it into a flan mold.
3. Blend the condensed milk, coconut milk, cocoa powder, eggs, vanilla, and salt.
4. Pour the mixture into the mold over the caramel. Bake in a water bath until the center is set.
5. Cool before chilling in the refrigerator. Invert onto a plate to serve.
